Peanut Butter Clusters
July 15th, 2019 0 commentsThis recipe has turned into one of my most requested afternoon snacks. Imagine if a granola bar and a Rice Krispie Treat had a baby, well this would be it. These clusters still have that great crunchy texture, with the addition of smooth creamy peanut butter and yummy chocolate chips. Nutritionally, they also have a lot more to offer with protein, omega-3s and fiber to name a few things. Luckily they’re quick to make but be careful because they can be quick to go as well!

Peanut Butter Clusters

- 1 ½ cup gluten-free old-fashioned oats*
- 1 ½ cup creamy peanut butter
- ¾ cup creamed honey
- 2 tablespoons flax meal
- ¾ cup brown rice crisps
- ½ cup honey roasted peanuts, chopped
- 1 cup mini marshmallows
- ½ cup dairy-free chocolate chips*
- *if planning to keep the recipe gluten and dairy free
- Preheat oven to 350 degrees and line a small baking sheet with parchment paper. Place the oats on the baking sheet and toast for about 8 minutes until fragrant. Set aside and let cool for at least 5 minutes.
- In a small saucepot combine the peanut butter and honey. Place the pot on medium heat, stirring frequently with a rubber spatula, and melt the peanut butter and honey for about one to two minutes, until they just come together. Do not over heat. The mixture should be smooth and slightly warm but not hot. If the mixture is really warm/ hot let cool for 5-10 minutes as not melt the marshmallows.
- In a large bowl add the oats, peanut butter mixture, flax, brown rice crisps, peanuts, and marshmallows. Stir gently until combines and spread the mixture out on the small lined baking sheet. Place in the freezer for 5 minutes to cool the mixture down to room temperature. Once cooled return the mix to the bowl and stir in chocolates chips until evenly distributed do not over work. Form into small clusters/balls about 2 tablespoons each. Place them on the parchment lined baking sheet and freeze for 5 minutes or refrigerate until chilled and ready to serve. You can always serve them at room temperature as well.
- If you mix everything together when the oats and peanut butter are really warm it will melt the marshmallows and chocolate chips. Therefore be sure to mix ingredients once the oats are cool and the melted peanut butter mixture are barely warm top touch. If you prefer everything to melt together, then by all means please mix all ingredients together while the oats and peanut butter are warm..
- Clusters to Square: prefer a bar format? Simply place the cooled mixture into a 8x8 parchment lined baking dish, chill and slice into squares. They then become more like peanut butter crispy treats..
- Try using almond butter, cashew butter or even sunflower butter instead of peanut butter..
- I love using honey-roasted peanuts, but feel free to use regular roasted peanuts (salted or unsalted)..
