I’m always making a variety of snacks. When fueling athletes, growing kids or just hungry adults we all want to feel good about our snack choices. These puppies are tasty and nutrient dense. Loaded with vitamins and minerals, these protein packed bites should help fuel you for your day. They are also paleo, gluten-free, dairy-free and vegan if you choose the correct protein powder and melting chocolate.

Chocolate Coconut Protein Bites

Ingredients
  • 18 large pitted dates
  • ¾ cup almond butter
  • ½ cup protein powder, Vega Sport vanilla flavor preferred
  • ½ cup unsweetened shredded coconut, plus about ¼ cup for coating
  • 2 tablespoons hemp seeds
  • 2 tablespoons cocoa nibs
  • 1 tablespoon chia seeds
  • 4 ounces bittersweet chocolate, or paleo dark chocolate
Directions
  1. Line a large plate with parchment paper and set a side. Place the dates in the food processor, turn to the on position until the dates are finely chopped and it starts to form ball. Add in the almond butter, protein powder, ½ cup coconut, and 1 tablespoon of water. Pulse until all the ingredients are well combined. Grab about 2 teaspoons of the mixture and form a ball. It should hold its form and not crumble. If it crumbles, add in another ½ tablespoon to tablespoon of water until it can easily holds its form.
  2. Place the mixture into a large bowl, add in the hemp seeds, cocoa nibs, and chia seeds until well incorporated. Grab about 2 teaspoons at a time and form a disk by placing the mixture between your thumb and index finger. Place all disks onto the parchment lined plate.
  3. Place the remaining ¼ cup shredded coconut in a small bowl and set aside. In a small heatproof bowl, add the chocolate, and melt it in the microwave on 50% powder for one minute and thirty seconds. Using a small rubber spatula stir. Return the chocolate to the microwave for another minute on 50% power. Stir it to make sure it has completely melted, if it has not, repeat this process in 30-second increments until the chocolate has completely melted. Grab one disk at a time, dip it in the melted chocolate and then in the shredded coconut. Place it on the parchment lined plate. Once all protein bites have been dipped, place the plate in the freezer for 5-10 minutes until chocolate has set.
DK Tips
  • Add 2 tablespoons of chopped nuts like almonds or peanuts.
  • Try changing up the nut butter by using peanut, cashew or sunflower butter.
  • Make a double batch and keep some in the freezer for up to 3 weeks. Just be sure to store them in an airtight container.
